    •  1 egg
    • 1/4 cup of olive oil
    • 1/4 cup of smooth peanut butter (make sure it doesn't contain xylitol) 
    • 1 tsp vanilla extract 
    • 1 cup of carrot, grated
    • 1 cup of flour (whole wheat or all purpose) 
    • 1/3 cup 100% pure honey 
    • 1 tsp of baking soda 


    1. Preheat oven to 350°degrees.
    2. Grease a ring-shaped cake mold.
    3. In a large bowl, mix the egg, peanut butter, vanilla extract, honey, and oil. Mix it well, then add the grated carrots.
    4. Sift the baking soda and flour together, then add this to the mixture.
    5. Pour the batter into the greased pan, bake for 40 minutes. When cooked, let the cake sit in the pan for 10 minutes before turning it out onto a wire rack to cool completely.

    1. Preheat oven to 350°F degrees.
    2. In a large bowl, mix the water, coconut oil (or olive oil), molasses and the pumpkin.
    3. Add the dry ingredients to the mixture: flour, baking powder, baking soda, and the cinnamon. Stir it until you have a soft dough.
    4. Using a tablespoon, scoop out the mixture and roll into balls, Place the balls onto a cookie sheet that has been lightly greased. Then using a fork, press down on them to flatten them.
    5. Bake for 25 minutes.
